Over the years, I have been looking for the recipes of several Hungarian dishes which my grandmother used to cook for us as children. Each one of us had our favorites and would plead with our grandmother to cook our special dish. More often it seemed that the other grandchildren got their wishes then I did, but as time passed I realized she treated us equally and played no favorites. Many of us wanted to taste some of these long lost dishes - However, the was a slight problem.

Hy !! My name is Valerio Petretto;
I live in Italy, in a beautiful place surrounded by lakes and hills, in the northern part of the region of Lazio, located in the center of Italy. In this region you can find cities such as Roma, Viterbo, Latina, Frosinone and Rieti and here you can really get the flavor of 2500 years of history. If you have never been to Italy, well... think about coming to Italy for a couple of weeks and you will fall in love with the places, the people and the incredible food Italians know how to to prepare (and eat!).
I am 39 years old and during my life I have experienced different types of life styles. I was born in Johannesburg, South Africa, in an Italian family. With my family, we later returned to Italy, our home, where the art of cooking is an integral part of our culture.
I found out that a lot of people would like to learn how to prepare Italian dishes, not only pizza but also pasta, meat, fish, desserts and cookies.
Many purchase cook books that are not easily understandable or they search on the net for sites where they can find answers to their questions. Unfortunately,all the Italian cook books and specialized sites have been made for “experts” who already know the tricks of the trade and the secrets that lay behind the preparation of traditional Italian dishes. Also these books and/or courses you find, can be quite expensive.
Only chefs that can understand complicated recepes, not easily understandable and that might miss very important preparation steps (that are given for granted by trained chefs) can use these recipes to fix perfect traditional Italian dishes.
But what about everyone else?
That brings us to the everyday user, and I imagine you are one of them. One that does not have a great knowledge in the field of Italian cooking (such as the housewife who would like to make a good plate of lasagne or someone who is single and is tired of eating fast food and who would like to eat risotto alla pescatora. Or the cooking fan that wants to increase his/her knowledge on the subject of cooking). What is the everyday user supposed to do?
Armed with a lot of enthusiasm, he/she buys a big book of Italian recipes (spending maybe up to $30 or $40) written by a “great“ chef, starts to mess around with ovens and burners and starts to feel stressed out. He does not understand a specific part of a recipe, so while working on preparing some of the ingredients, he gets other ingredients ruined or burned because the recipe did not explain how to get that specific basic part of the recipe done, or the person does not understand the meaning of some of the words because the “great” chef purposely avoided explaining some part of the recipe so that only chefs of his level of perfection can understand the recipe. This makes it so that people like you, the everyday person, will have to go to the chef's restaurant and pay for the dish you were trying to fix in the first place! So the person interested in learning how to cook looses faith in himself and abandons his desire to learn how to cook and winds up making some spaghetti for his friends once in a while, which will undoubtedly be overcooked and taste bad. His friends won't even tell him how bad these taste.
All this is caused by a huge lack of information, which I have decided to remedy FOR YOU, MY FRIEND, through my publications.
I really love the cooking tradition of my country and I therefore want to teach it to everyone, in a simple and fully comprehensible way. I want to reveal the tricks of the trade and the little secrets that make a simple plate of pasta into a work of art. |
